Dietary factors are estimated to account for approximately 30% of cancers in western countries making diet second to tobacco as a preventable cause of cancer. This proportion is thought to be about 20% in developing countries and is projected to grow. More than half of all Americans have at least one chronic illness, and despite advances in treatment and management, the rates have risen significantly.
